Asparagus-Edamame Salad Recipe
Check out this recipe. It’s from Cooking Wise (Recipes for Healthier Living) First Line Therapy Cookbook by Metagenics. We all need a healthier version or just ideas to mix it up every now and then. Edamame is a soy based product. If you can’t do soy then replace with sweet peas or green beans.
This a a great idea for a cold salad to take to work. Reach your nutrition goals by packing your lunch for work, even if you work from home!
Aspargus-Edamame Salad (serves 6)
vegan, dairy free and gluten free

Servings: 1 oil, 1 legume, category 1 veggie (non-starchy), 1 veggie
1 lb (454 g) medium asparagus, ends discarded
5 tsp (25 ml) olive oil, divided
2 cups (16 oz. package) (454 g) frozen edamame (green soy beans),defrosted OR green peas or beans optional
1/4 lb (113 g) arugula (or any mixture of baby greens you desire)
1/4 cup (20 g) Parmesan cheese or fake cheese (Dairy free: omit)
2 tsp. (10 ml) balsamic vinegar
Sea salt to taste
Freshly ground black pepper to taste
*optional – sprouts or spinach leaves
*optional – sesame seeds
